Easy, Healthy Banana Pancakes
If only these pancakes looked this pretty every time. But they do taste amazing, and require just three ingredients, and almost no time to cook. After seeing this recipe posted by Caitlin Covington on Instagram earlier this year, I have been hooked. I have since seen several variations of the recipe from a variety of sources but all you need are 1 Banana & 2 Eggs and a blender or mixer. I add a tablespoon of chia seeds, and a teaspoon of flour to make the pancakes extra fluffy.
Once you mix the ingredients (should look like pancake batter), cook each side on a non-stick skillet/pan for about 2 minutes on each side. I have found (like most recipes), it can take a little trial and error to get it right, but even when I have burned these slightly (as shown below), it was nothing a little blueberry jam couldn’t fix. My favorites are from Farm + Table in Kennebunkport, Maine, and more recently, from Bonton Farms, a local Dallas farm, with amazing blueberry jam.
I can’t wait to make these again this week.
